Groundstate is a cafe roastery based in the Liberties, Dublin.


 

It is run by two mates, a scientist and a yogi, Andy & Mark.


The aim was to build something authentic and sustainable when opening Groundstate.

The coffee, they source and roast is of exceptional quality.

They partner with small growers and specialty importers to secure the best possible single origin coffee available.

 

Groundstate search for interesting unusual lots and roast aiming to draw out the unique characteristics of the coffee's terroir.

Each roast in small batches using fluid bed roasting technology.

Being environmentally aware is of the utmost importance and at Groundstate they have decided to offset some of our carbon footprint by teaming up with Hometree to plant native Irish trees.

The Origin

The Tripping Thiago coffee from Groundstate originates from the Minas region of Brazil and the Huila Region of Colombia.

We don’t often feature blends, however the Tripping Thiago is something special. the two naturals, one of which an Aerobic Natural creates a deliciously sweet and juicy coffee.

The Brazilian coffee originates from Santa Izabel which is located in the south of Minas region of Brazil 1,150m above sea level and is a sustainable, world-class coffee bean producer with a Rainforest Alliance Certification.

The farm has 766 acres of the land dedicated to coffee production and has over 175 acres of natural reserve area.

Finca El Meson.

Floresmiro Guaca produced the Colombian anaerobic natural coffee on Finca El Mesón, his farm located in the town of Acevedo, Huila in Columbia.

This pink bourbon coffee was fermented for 70 hours, sun-dried for 21 days, and finally mechanically dried for 8 hours at 40° C.

The result is a sweet and bubbly coffee with notes of Cherry, fudge, watermelon.

The pink bourbon variety is cultivated from a hybrid of Red and Yellow Bourbon, and is said to have been first found in Pitalito, Huila.

Quite a rare variety, Pink Bourbon has a substantial amount of natural sugars which are thought to help give the coffee it's more delicate, soft and complex profile.
