Foundation coffee roasters are an independent roastery and equipment supplier based in St Ives, Cornwall.


They began their coffee journey with a mission to create quality and high-grade speciality coffee while at the same time using the best possible ethical practices that have a minimal impact on the environment.

This transcends from the sustainable relationships they build at source all the way through to the Omni-degradable and home compostable coffee bags that they showcase their coffee.

 

Foundation focus on honesty and transparency throughout their business - two things that we hold extremely important too. Their involvement at origin stems from these two ethics as they prefer to deal with coffee farms and mills directly. 

It is a super important step that more and more roasters across the world are making.

Although it is hard and requires time and money, there is no substituting the value that is gained when you can see exactly where the coffee is coming from, speak to the people that grow it and nurture sustainable long-lasting relationships.

 

All of this knowledge can then be passed onto the consumers to better educate them on the issues in coffee-growing regions of the world.

The work that is put into their sustainable sourcing of coffee is carried into their local community in St Ives where they participate in the community orchard - donating the chaff (a byproduct of coffee roasting) to help mulch the fledgeling apple trees.

They also send coffee grounds to the New yard restaurant to use in their walled garden.

The Origin

The Cauca Decaf Coffee from Foundation Coffee Roasters originates from the Huila region of Colombia.

Located in southwestern Colombia, Huila is nestled in-between the Central and Eastern ranges of the Andes, with the middle area called the Magdalena Valley.

The variation in elevation results in Huila being one of the country's most unique and complex regions of coffee production.

Its terroir, climate, and harvest cycles all contribute to the quality of coffee produced here.

The most impressive quality behind the coffees coming out of Huila lies in the people producing them. While Huila accounts for nearly 20% of the country's production, 80% of coffee producers operate on less than three hectares.

Ethyl acetate is an occurring ester (present in bananas and also as a by-product of fermented sugars) that is used as a solvent to bond with and remove caffeine from green coffee.

First, the coffee is sorted and steamed for 30 minutes under low pressure in order to open the coffee seeds’ pores and prepare them for decaffeination.

The coffee is placed in a solution of both water and ethyl acetate, where the E.A. will begin to bond with the salts of chlorogenic acids inside the seeds. The tank will be drained and re-filled over the course of eight hours until caffeine is no longer detected.

The seeds are steamed once more to remove the ethyl acetate traces, though E.A. is only harmful to humans in very high quantities (400 parts per million or more). The coffee is then dried and polished for export.
