Etude Coffee Roasters - Las Penitas

 
 
 

Etude is the brainchild of coffee extraordinaire, Amir Montazer.


 

Launched over the last year, Etude is looking to fine tune every aspect of coffee roasting.


Amir is no regular coffee guy. Having previously worked as a software engineer he became increasingly drawn to learn more about the wonders of specialty coffee.

 

So he started taking coffee courses and before long started teaching people about coffee around the world.

He has been a trainer in 2 EU barista camps and trained more than 500 baristas around the world.

Amir is also really into tasing different coffees so started judging coffee championships 3 years ago, he’s now a world certified judge, which means he can judge world championships!

As you would expect he learned a lot through his travels about coffee and coffee roasting and the dream was always to start his own coffee roastery.

The dream has now become reality in the shape of Etude. The name is a reference to another love of his, classical music. An Etude is a piece to showcase technique and skill, which he is trying to do with coffee roasting!

The Origin

The Las Penitas coffee from Etude Coffee Roasters originates from the Huehuetenango region of Guatemala.

Francisco’s life is a story of determination. He worked as a day labourer for many years and emigrated to Mexico in order to save up enough money to buy his coffee farm.

 
 
 

After so much sacrifice, he says that the farm is like part of his family. A peña is a large boulder in Spanish, and he named his farm after the rocky areas surrounding the cultivated land, which is home to many wild animals and birds.

He lives with his wife Izabela and two daughters, and they work together on the farm to do the work of harvesting. After harvest, he uses a manual depulper to depulp the cherries on the same day and then ferments them for 24 hours.

After washing, he soaks the coffee a second time for around 8 hours using clean water, in order to preserve the elegant and clean flavours in his coffee.
