Coffee Factory is a family run coffee roastery based in Axminister.

The coffee is all ethically sourced and roasted on Dorothy the vintage Probat Roaster

The story began many moons ago in their home town of Axminster, where after traveling Australia their passion for coffee grew and they set it upon theirselves to share their love of great coffee.

The team opened a coffee bar and having not found a good coffee roasters they started to roast their own.

As Coffee Factory have grown over the years they have moved three times and are now based deep in the Countryside on the Devon/Dorset Border.

The Roastery is the heart of our business where head roaster Danny lights up Dorothy our Vintage Probat UG roaster on a daily basis.

The Origin

The Comicovel coffee from The Coffee Factory originates from the Opalaca mountain ranges in Honduras.

The Comicovel cooperative is composed of smallholder producers who farm coffee organically with a focus on overall environmental sustainability.

Comicovel’s members’ properties are located in the Opalaca mountain ranges across the Intibuca and Lempira Departments.

The dry mountains are generally planted with pine trees. Planting trees is a special focus of the co-op, along with their water management project.

Producers process coffee using their basic de-pulping and fermentation infrastructures.  Coffee is fermented in tanks for 18-24 hours and washed in washing channels.

Most farmers dry their own coffee on concrete patios or sometimes also on raised beds in greenhouses for 14-20 days. The co-op has worked with these farmers for many years and provided technical assistance to increase productivity on the farms.

The combination of high altitude (up to 2,200m in some areas), fertile soil, consistent and plentiful rains, and an abundance of local knowledge are all contributing factors to the high status of Yirgacheffe coffees.

The local indigenous ‘heir-loom’ varietals - which grow wild in Ethiopia - are responsible for the unique flavour notes which make for an unusual but refined cup.
